Tried setting up your own? I get why a massive company like MS or Sony might do it but I don't see why it should be up to game creators to pay for additional servers, especially when they release their own DS application.

they don't, dedicated servers are owned by players, communities etc not devs or publishers.

Assetto Corsa has a couple of official servers and then there's full of "private" servers made by people, which work pretty well actually.
