Not only does it make it quicker and easier to get the front bar off to work around the engine, but also in the case of a crash, the theory is the bumper will more so 'pop' off in 1 piece to prevent extreme damage to it, rather than get smashed off.

Novel idea, but I didn't think a few bolts or T25 screws were that hard to remove though.

It's all about time with racing teams, time is money. 5 minutes spent undoing some bolts to take a bumper off, versus, 10 seconds with the quick release system.
